What the best tables are looking for
A sommelier or floor manager building a serious wine list isn't looking for a reassuring name. They're looking for a coherent story, a traceable origin, a wine that has something to say at the moment it's poured.
The grand champagne houses are everywhere. And for exactly that reason, they're losing ground with the tables that want to stand apart.
A récoltant manipulant is the opposite: limited production, grapes from a single estate, extended aging on lees, and a family that picks up the phone. What hospitality professionals call a defensible wine — one you can talk about at the table without a prepared service note.
